Solid brass or brass-tone. Genuine solid brass is heavy, warms in the hand, develops a patina and can be polished back forever. Brass-finished iron or zinc looks the part for a third of the price but the finish sits on top: it can wear at the edges and it will never age into anything. Neither is wrong — it is a question of whether you are buying a centrepiece to keep or a table to dress this season. A quick test on a piece you already own: a magnet sticks to brass-plated steel and slides off solid brass.

Weight and base diameter. This is the criterion most people skip and then regret. A 10-inch taper is a long lever, and a holder with a base under about 3 inches tips if a sleeve catches it. Cast iron cores are heavier than they look and are usually the safer buy for a table people actually reach across; hollow brass-tone sets are the ones to keep on a mantel.

Cup size. The standard dinner taper is 7/8 inch at the base, and almost every holder sold as a "taper holder" is cut for it. Beeswax tapers and hand-dipped candles are often slightly wider and need a shave with a knife, or a little candle putty in the cup. Anything sold as a pillar holder is a different object entirely — check the plate diameter against the candle rather than assuming.

Honest drawbacks

Brass is not a low-maintenance metal. Raw brass fingerprints, tarnishes unevenly in a humid kitchen, and looks blotchy rather than antique if you polish half of it. Lacquered brass avoids all that and in exchange looks slightly, unmistakably new.

Tapers themselves are the other honest catch: they burn for around 6–8 hours, they drip if you buy cheap paraffin or sit them in a draught, and wax on a raw brass cup is genuinely annoying to remove. Finally, scent and dinner do not always get along. Amber, moss and dried lavender are lovely in a hallway and distracting over a meal, which is the argument for keeping one unscented pillar or a plain beeswax taper on the table and putting the scented jar on a side table instead.

Cluster three tapers of different heights, add one nostalgic candle off to the side, and let the brass catch the light. Instant grandmacore. An odd number reads better than an even one, and a shallow tray or a folded runner underneath turns a scatter of objects into an arrangement.
